Description

This recipe delivers tender strips of beef stir-fried with colorful bell peppers and onions, all coated in a savory sauce. It’s a quick and easy weeknight meal that’s full of flavor.

Ingredients

Scale
  • 1 pound beef tenderloin, thinly sliced against the grain
  • 1 tablespoon cornstarch
  • 2 tablespoons soy sauce
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon olive oil
  • 1 large onion, sliced
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 1/4 cup beef broth
  • 1 tablespoon brown sugar
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper

Instructions

  • Marinate Beef: In a bowl, combine beef slices with cornstarch, soy sauce, and Worcestershire sauce. Marinate for at least 15 minutes (or up to 30 minutes) in the refrigerator.

  • Stir-fry Vegetables: Heat olive oil in a large skillet or wok over medium-high heat. Add onion and bell peppers and stir-fry for 5-7 minutes, or until softened and slightly browned. Remove from skillet and set aside.

  • Cook Beef: Add marinated beef to the skillet and cook until browned and cooked through, about 5-7 minutes.

  • Make Sauce: In a small bowl, whisk together beef broth, brown sugar, garlic powder, and black pepper.

  • Combine and Simmer: Return vegetables to the skillet. Pour sauce over beef and vegetables. Bring to a simmer and cook for 1-2 minutes, or until sauce has thickened slightly.

  • Serve: Serve immediately over rice or noodles.

Notes

  • Feel free to substitute or add other vegetables, such as mushrooms, snap peas, or water chestnuts.
  • You can adjust the amount of brown sugar to your taste.
  • For a spicier dish, add a pinch of red pepper flakes to the sauce.
  • This recipe can be easily doubled or tripled to feed a larger crowd.
