Description

A classic Greek salad, also known as Horiatiki, is a simple yet flavorful dish that showcases fresh, seasonal ingredients. It’s a vibrant salad typically made with ripe tomatoes, cucumbers, onions, olives, feta cheese, and a dressing of olive oil, oregano, and vinegar.


Ingredients

  • 2 large ripe tomatoes, diced
  • 1 English cucumber, peeled and diced
  • 1/2 red onion, thinly sliced
  • 1 cup pitted Kalamata olives
  • 1/2 cup crumbled feta cheese
  • 1/4 cup extra virgin olive oil   
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  • Combine vegetables: In a large bowl, combine the diced tomatoes, cucumber, onion, and olives.
  • Make the dressing: In a small bowl, whisk together the olive oil, red wine vinegar, oregano, salt, and pepper.
  • Add feta and dress: Add the crumbled feta cheese to the vegetable mixture. Pour the dressing over the salad and toss gently to coat.
  • Serve: Serve immediately or chill for later.

Notes

  • Use ripe, juicy tomatoes for the best flavor.
  • Freshly crumbled feta cheese adds a tangy flavor.
  • Kalamata olives are traditional, but you can use other olives if preferred.  
  • Feel free to add other ingredients to your Greek salad, such as bell peppers, capers, or fresh herbs like mint or dill.
